  1. Pre-heat your oven to 160 Celsius degrees,
  2. Grease 2 medium loaf pans, add parchment paper on bottoms and grease the parchment papers,
  3. Sift together flour, salt, baking powder, soda, and cinnamon in a large bowl,
  4. In a second bowl (larger than first) beat the eggs with sugar and vanilla. Works well with your mixer if you like,
  5. Continue mixing and slowly add the oil in the mixture,
  6. Add the sifted flour mixture and incorporate it carefully. Make sure the batter do not get over-mixed,
  7. Using a wooden spoon or a spatula mix in the zucchini and just turn over the batter few times to jus incorporate the zucchini,
  8. Pour the batter in the pans,
  9. Bake the breads 50 - 60 minutes or until the skewer inserted in the center comes out dry,
  10. Take the breads out of the oven and let them cool in the pans for 15 minutes to stabilize their shape. This way you'll get much nicer cuts when served.
