Instructions
  1. Preheat the oven to 200 Celsius degrees or 400 Fahrenheit degrees and butter a large enough baking casserole
  2. Peel and pit the peaches, then slice them in thin wedges
  3. Toss the peach wedges with the sugar and the lemon juice and arrange them in a layer into the baking dish; then set aside
  4. In a large enough mixing bowl add the flour, baking powder, baking soda, sugar and salt and combine them well
  5. Add the butter (chilled!) and mix the dough with your fingers until it starts looking like a coarse cornmeal
  6. Stir in the milk a little at a time and combine to make a soft dough (use a spoon for this)
  7. Spoon the dough over the peaches in the casserole and bake for 25-35 minutes or until the dough surface turn golden and the peaches are tender
