  1. In a large bowl whisk together the dry ingredients (flour, sugar, baking powder and salt)
  2. In another, smaller bowl beat the eggs lightly, then mix with milk and oil
  3. Add these wet ingredients over the dry ones in the first, larger bowl and mix just until they start to moist; *do not overmix*, just let it a little lumpy
  4. Pre heat your nonstick frying pan or griddle and bake them one by one for a couple of minutes or so on each side (or bake two by two if using a griddle large enough or 2 pans)
  5. The pancake is done when it’s golden brown on both sides; the interior should be fluffy!
  6. Pile them on serving plates and spread some maple syrup a a few pieces of butter on top
  7. Put the rest of the syrup in bowl and serve it together with the pancakes!
