Warm the milk a little and check it with your finger – it should not be hot, just warm
Put the milk in the bowl of the stand mixer and add the yeast, then wait for about 5 minutes
Then add the orange juice and the honey and stir to combine
Add the regular wheat flour, the whole wheat flour and the salt
Warm gently the butter in the microwave (about 30 seconds) and add it in the bowl, then stir until the dough starts to form
Attach the dough hook accessory to the stand mixer and set the bowl in it’s place
Knead for 5-7 minutes on medium speed, until the dough gets smooth. If it gets too stiff slowly add 1 teaspoon of water at a time until it gets right
Spray or grease a larger bowl and place the dough in, then cover with plastic wrap and let it rise for an hour or until it’s double in size
Coating the Monkey bread dough bits
Mix the granulated sugar with the orange zest together in a small bowl
Mix the milk and butter in another bowl and gently warm the mixture in microwave to melt the butter for about 30 seconds
Lightly grease a large bundt pan (or spray it with cooking spray)
Tear off pieces of dough and roll them into balls. These should be about the dimension of an egg
Dip each dough ball first in the milk-butter mixture then in the orange-sugar mixture and place it in the greased bundt pan until they form a layer
Throw in some cranberries and distribute them evenly over the dough layer
Add another dipped dough balls layer, sprinkle more cranberries and so on until the dough and cranberries finishes
Pout in the remaining butter mixture evenly over the dough in the bundt pan
Cover the bundt pan with plastic wrap and let it rise for about an hour or until its volume dubles
Baking the Monkey Bread
Preheat the oven to 180 celsius / 350 fahrenheit degrees
Bake the Monkey Bread 30-35 minutes or until the colour turns light brown
Glazing the Monkey Bread
In a small bowl whisk together the powdered sugar and orange juice until it forms a creamy consistency; add a little powdered sugar or orange juice to adjust it if needed
Let the Monkey Bread cool for about 5 minutes after baking then place the plate over the bundt pan upside-down
Carefully turn over the Monkey Bread to the plate and remove the bundt pan
Spread the orange-sugar glaze evenly over the Monkey Bread and serve immediately – the Monkey Bread is best served warm!
