  1. Put aside half of one green chilli, half of one spring onion and a teaspoon of fresh coriander and chop them well
  2. Using a pestle and mortar make a chilli paste using the remaining of the fresh green chillies, spring onions, coriander and salt
  3. Remove the skin and the seed of the avocado and mash the remaining flesh in a paste
  4. Combine the two mixtures and add the diced potatoes, the chopped green chilli, spring onion and coriander
  5. Add the juice from the half lime and mix thoroughly
  6. Serve with yellow tortilla chips!
