  1. Preheat your oven to 190 degrees celsius, or 375 degrees fahrenheit
  2. In a microwave-safe glass bowl put the onion, broccoli and mushrooms together with a tablespoon of water
  3. Cover the bowl (you can use platic wrap for this) and leave a hole in the cover
  4. Put the bowl in the microwave for 2 minutes at the “high” setting
  5. After the 2 minutes check if the broccoli has softened; if not, microwave for another minute or so
  6. Take the bowl out of microwave and drain away the liquid
  7. Now oil the casserole with some olive oil or a cooking spray and spread the microwaved vegetables in the casserole
  8. Using another bowl whisk the eggs until they start foaming
  9. Pour the milk and stir until combined
  10. Add the shredded cheese, thyme, salt and pepper and fold them in with a spoon or spatula
  11. Add this egg – cheese mixture over the vegetables in the casserole
  12. Bake the casserole for 40 minutes or until the egg mixture got golden and fluffy
