Cook Time
  1. Set your oven to 180 Celsius degrees or 350 Fahrenheit degrees
  2. Grease a medium loaf pan and line it with greased parchment paper
  3. Toast the nuts in the oven and chop them roughly (or just buy toasted and chopped nuts from the beginning)
Preparing the banana bread batter
  1. Melt the butter in bowl (in microwaves or in a metal bowl on stove) and set it aside to cool.
  2. In another bowl slightly beat the eggs until whites and eggs are well combined and starts to foam
  3. Whisk together the flour, salt, cinnamon and baking soda
  4. In another bowl mash the bananas until they become a paste
  5. Into the bananas bowl stir in the melted butter, eggs, brown sugar and vanilla extract
  6. Gently stir in about a half of the flour mixture scrapping the sides of the bowl with a rubber spatula; then gently stir the remaining half of the flour mixture until the batter is smooth
  7. Stir in the nuts (but keep some of them for sprinkling on the top if you wish)
Baking the banana bread
  1. Pout the batter into the loaf pan and sprinkle some nuts on top of it
  2. Bake it for 60 minutes or until a skewer inserted in the middle comes out clean
  3. Check the bread for color after 30 minutes and if it is already well browned cover it with aluminium foil (or set your oven to warm only on the bottom side if applicable)
  4. When ready take it out of the oven and let it cool for 10-15 minutes before removing from the pan – this way the banana bread will stabilize its shape
