Monkey Bread Recipe Ingredients
- 275 g Milk
- 7 g Dry yeast
- 90 g Honey
- 60 g Orange juice (1 orange yield about 80 grams)
- 350 g Wheat flour
- 120 g Whole wheat flour
- 30 g Butter melted
- 5 g Table salt
- 150 g Granulated sugar
- 12 g Orange zest (1 orange yield about 12 grams)
- 45 g Milk
- 30 g Butter melted
- 55 g Dried cranberries
- 15 g Orange juice
- 60 g Powdered sugar
Monkey Bread Recipe Instructions
- Warm the milk a little and check it with your finger - it should not be hot, just warm
- Put the milk in the bowl of the stand mixer and add the yeast, then wait for about 5 minutes
- Then add the orange juice and the honey and stir to combine
- Add the regular wheat flour, the whole wheat flour and the salt
- Warm gently the butter in the microwave (about 30 seconds) and add it in the bowl, then stir until the dough starts to form
- Attach the dough hook accessory to the stand mixer and set the bowl in it's place
- Knead for 5-7 minutes on medium speed, until the dough gets smooth. If it gets too stiff slowly add 1 teaspoon of water at a time until it gets right
- Spray or grease a larger bowl and place the dough in, then cover with plastic wrap and let it rise for an hour or until it's double in size
- Mix the granulated sugar with the orange zest together in a small bowl
- Mix the milk and butter in another bowl and gently warm the mixture in microwave to melt the butter for about 30 seconds
- Lightly grease a large bundt pan (or spray it with cooking spray)
- Tear off pieces of dough and roll them into balls. These should be about the dimension of an egg
- Dip each dough ball first in the milk-butter mixture then in the orange-sugar mixture and place it in the greased bundt pan until they form a layer
- Throw in some cranberries and distribute them evenly over the dough layer
- Add another dipped dough balls layer, sprinkle more cranberries and so on until the dough and cranberries finishes
- Pout in the remaining butter mixture evenly over the dough in the bundt pan
- Cover the bundt pan with plastic wrap and let it rise for about an hour or until its volume dubles
- Preheat the oven to 180 celsius / 350 fahrenheit degrees
- Bake the Monkey Bread 30-35 minutes or until the colour turns light brown
- In a small bowl whisk together the powdered sugar and orange juice until it forms a creamy consistency; add a little powdered sugar or orange juice to adjust it if needed
- Let the Monkey Bread cool for about 5 minutes after baking then place the plate over the bundt pan upside-down
- Carefully turn over the Monkey Bread to the plate and remove the bundt pan
- Spread the orange-sugar glaze evenly over the Monkey Bread and serve immediately - the Monkey Bread is best served warm!

The Monkey Bread is best with homemade dough - that is why this recipe include this part - but if you need a shortcut then use some pre-made dough from the market, at the expense of some tastiness :-)
The original - traditional Monkey Bread is made with cinnamon and there is no trace of orange in it - if you prefer it this way then try this great recipe.
