I have to say, these delicious Burritos have it all: great flavour mix, texture, lots of fiber and protein .. and did I said they are delicious?

Burritos Recipe Instructions
Bring to boil 120 g water in a saucepan with a tsp of salt; then slowly pour in the rice (*do not* dump it in all at once and do not stir while pouring)
Stir lightly, cover the pot, then reduce heat to a simmer and cook for 15 minutes *without stirring*; check it after 10-12 minutes and if the water has gone but the rice is not tender add a couple of tablespoons of water
Bash the chicken thighs with a meat hammer to roughly 1cm thick, then put them in a bowl and season with salt and black pepper, then sprinkle the cumin, paprika and about half of the olive oil and mix well to coat
Preheat a griddle pan over a high heat and cook the meat for 10 minutes, turning halfway
In the meantime peel and slice the garlic, preheat a large frying pan, add about 1 tbsp of olive oil and fry the garlic for 1 minute
Dry and rinse the black beans, then add them in the frying pan and fry for 2-3 minutes gently stirring from time to time
Add the rice, stir gently and cook for 5 minutes or until the rice get crispy
In the meantime chop the coriander and add it in the frying pan, then grate in the lime zest and fry for another minute, then remove pan from the heat
Chop the tomatoes and put them in a bowl
Chop the spring onions and add them to the same bowl
Juice the lime and add the juice into the bowl, then mix and season well. This is the salsa, set it aside
Chop the lettuce and set aside in a bowl
Shred the cooled chicken and set aside in a bowl
Take one tortilla and put it in the hot griddle pan for 1 minute to soften, then place it on your working board
Spoon one quarter of rice and beans along the middle of the tortilla
Spoon over a quarter of salsa, a quarter of shredded lettuce and a quarter of shredded chicken
Grate some cheddar cheese and a spoon of yoghurt
Wrap tight the burrito and serve right away
Repeat with the other three & enjoy!
Burritos Recipe Tips & Tricks
Burritos are great fresh, of course, but they can be very well made in advance, wrapped in foil and freezed for up to 1 week; then, just microwave them for 5-6 minutes or bake for half an hour at 200 celsius degrees or 400 fahrenheit degrees and enjoy!
It's perfectly safe (and normal!) to use leftovers in burritos. Leftover rice, beans, leftover chicken or beef if you have on hand.
Some people hate the rice inside burritos - it's better to first ask everyone up-front for this.
There are lots of burrito variations out there (sometimes called burrito "styles"); try adding some french fries inside, or use brown rice instead, or replace the chicken with steaks of any kind. Or add some Guacamole along the meat, rice and beans for a "San Francisco style" burrito.
