  1. Rinse the brussel sprouts and cut them in halves
  2. Cut the bacon in short slices and set aside
  3. Bring to medium heat a cast iron or double bottom skillet with the olive oil
  4. Add the bacon slices and cook until crispy, light brown and slightly crusty
  5. Add the brussel sprouts and the chicken broth and stir occasionally
  6. Cook for 30 minutes on medium heat or until the brussel sprouts are tender but not mushy; *do not overcook the brussel sprouts* or they will get bitter

If there is one thing to remember about cooking brussel sprouts is to not overcook them - just taste them from time to time (especially at the end of cooking) and if you like them, turn the heat off. Keep in mind that the cast iron skillet will release heat for a while after turning the heat off and end cooking accordingly.

As variations, the next 2 things to try is to use butter instead of olive oil and add some garlic when frying the bacon.

Then the bacon can be something else, like pancetta, salami, even sausages or a combination of these - their flavour will have a great impact on the final product.

Or grate some parmesan cheese over the brussel sprouts and bake them in the oven instead. Or go even further and dredge and fry them Buffalo style like in this awesome recipe!
